Sodium bicarbonate is also known as sodium hydrogen carbonate and is commonly named baking soda. It is a white crystalline powder and insoluble in ethanol but slightly soluble in acetone. It is highly water-soluble, and the solubility increase with rising temperature. Evaporation separates it from water. Sodium bicarbonate has a bitter odor and salty taste; sometimes, it forms lumps. It is an inorganic and amphoteric compound (it acts as both acid and base). Deposits of sodium bicarbonate are found naturally all over the globe, which is called nahcolite.
